Andhra Style Prawns and Microgreens Curry is a delightful seafood dish that brings together the traditional spicy flavors of Andhra cuisine with the freshness and health benefits of microgreens. This curry is a perfect blend of tender prawns, aromatic spices, and vibrant microgreens, making it a wholesome and tasty option for your family's meals. The microgreens not only enhance the nutritional value but also add a unique texture and taste to the curry.


  • Prawns - 500g, cleaned and deveined

  • Microgreens - 1 cup

  • Onion - 1 large, finely chopped

  • Tomato - 2 medium, finely chopped

  • Green chilies - 2, slit

  • Ginger-garlic paste - 1 tbsp

  • Turmeric powder - 1/2 tsp

  • Red chili powder - 1 tsp (adjust to taste)

  • Coriander powder - 1 tsp

  • Garam masala - 1/2 tsp

  • Mustard seeds - 1/2 tsp (or) Mustard microgreens - 1/4 cup

  • Cumin seeds - 1/2 tsp

  • Curry leaves - a few

  • Tamarind pulp - 2 tbsp

  • Fresh coriander leaves - for garnish

  • Salt - to taste

  • Oil - 2 tbsp

  • Water - as needed


  1. Prepare the Prawns:

    • Clean and devein the prawns. Rinse them thoroughly and set aside.

  2. Sauté the Onions:

    • Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add curry leaves and green chilies.

    • Add the finely chopped onions and sauté until they turn golden brown.

  3. Add Spices and Tomatoes:

    • Add ginger-garlic paste and sauté for a minute until the raw smell disappears.

    • Add turmeric powder, red chili powder, and coriander powder. Mix well.

    • Add the finely chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.

  4. Cook the Prawns:

    • Add the cleaned prawns to the pan and sauté for a couple of minutes until they turn pink.

    • Add salt to taste and a little water to make a gravy. Let it simmer for 5-7 minutes until the prawns are cooked through.

  5. Add Tamarind Pulp and Microgreens:

    • Add the tamarind pulp and mix well. Cook for another 2-3 minutes.

    • Stir in the microgreens and let them wilt into the curry. Cook for another 2 minutes.

  6. Finish and Garnish:

    • Sprinkle garam masala and mix well.

    • Garnish with fresh coriander leaves and remove from heat.

  7. Serve:

    • Serve the Andhra Style Prawns and Microgreens Curry hot with steamed rice or roti.
