Andhra Style Prawns and Microgreens Curry is a delightful seafood dish that brings together the traditional spicy flavors of Andhra cuisine with the freshness and health benefits of microgreens. This curry is a perfect blend of tender prawns, aromatic spices, and vibrant microgreens, making it a wholesome and tasty option for your family's meals. Ingredients
Prawns - 500g, cleaned and deveined
Microgreens - 1 cup
Onion - 1 large, finely chopped
Tomato - 2 medium, finely chopped
Green chilies - 2, slit
Ginger-garlic paste - 1 tbsp
Turmeric powder - 1/2 tsp
Red chili powder - 1 tsp (adjust to taste)
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Mustard seeds - 1/2 tsp (or) Mustard microgreens - 1/4 cup
Cumin seeds - 1/2 tsp
Curry leaves - a few
Tamarind pulp - 2 tbsp
Fresh coriander leaves - for garnish
Salt - to taste
Oil - 2 tbsp
Water - as needed
Preparation
Prepare the Prawns:
Clean and devein the prawns. Rinse them thoroughly and set aside.
Sauté the Onions:
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add curry leaves and green chilies.
Add the finely chopped onions and sauté until they turn golden brown.
Add Spices and Tomatoes:
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add turmeric powder, red chili powder, and coriander powder. Mix well.
Add the finely chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
Cook the Prawns:
Add the cleaned prawns to the pan and sauté for a couple of minutes until they turn pink.
Add salt to taste and a little water to make a gravy. Let it simmer for 5-7 minutes until the prawns are cooked through.
Add Tamarind Pulp and Microgreens:
Add the tamarind pulp and mix well. Cook for another 2-3 minutes.
Stir in the microgreens and let them wilt into the curry. Cook for another 2 minutes.
Finish and Garnish:
Sprinkle garam masala and mix well.
Garnish with fresh coriander leaves and remove from heat.
Serve:
