Ingredients
500g boneless chicken, cut into bite-sized pieces
1 cup plain yogurt
2 tablespoons lemon juice
2 tablespoons ginger-garlic paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon turmeric
1 teaspoon garam masala
Salt to taste
2 tablespoons oil
1 cup assorted microgreens (such as pea shoots, mustard greens, or cabbage microgreens)
Preparation
Step 1
In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, ground cumin, ground coriander, paprika, turmeric, garam masala, and salt to make the marinade. (Add Microgreens paste if you want to sneak in Microgreens for your kids)
Step 2
Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.

Preheat the grill to medium-high heat.

Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.

Brush the grill grates with oil to prevent sticking. Place the chicken skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has charred edges.

Once the chicken tikka is cooked, remove it from the grill and let it rest for a few minutes.

Arrange the chicken tikka on a serving platter and sprinkle the assorted microgreens over the top.
