Ingredients

• 4 large eggs

• 1 small onion, finely chopped

• 1 small tomato, finely chopped

• 1 small green chili, finely chopped (optional)

• 1/2 bell pepper, finely chopped

• 1/2 teaspoon cumin seeds

• 1/2 teaspoon turmeric powder

• 1/2 teaspoon red chili powder

• Salt to taste

• 2 tablespoons oil or ghee

• A handful of microgreens (any variety like sunflower, radish, or pea shoots)

• Fresh coriander leaves, chopped (optional)

Preparation

1. Prepare the Eggs:

• Crack the eggs into a bowl and whisk them until they are well beaten. Set aside.

2. Cooking the Base:

• Heat oil or ghee in a pan over medium heat.

• Add cumin seeds and let them sizzle for a few seconds.

• Add the chopped onions and sauté until they turn translucent.

3. Adding Vegetables:

• Add the green chili and bell pepper, sauté for 2-3 minutes until they start to soften.

• Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.

4. Spicing It Up:

• Add turmeric powder, red chili powder, and salt. Mix well and cook for another minute.

5. Cooking the Eggs:

• Reduce the heat to low, and pour the beaten eggs into the pan.

• Stir continuously to scramble the eggs and combine them with the vegetable mixture.

• Cook until the eggs are fully scrambled and cooked through.

6. Adding Microgreens:

• Once the eggs are cooked, turn off the heat.

• Gently fold in the microgreens, allowing their freshness to remain intact.

7. Serving:

• Transfer the egg bhurji to a serving dish.

• Garnish with fresh coriander leaves if desired.
