Ingredients

  • Bottle gourd

  • Curry leaves

  • Garlic

  • Green chilies (avoid small pieces)

  • Salt

  • Fresh turmeric (preferred over dried)

  • Cold pressed sesame seed oil

  • Choice of Microgreens (such as radish, Chinese cabbage, and peas)

Preparation

Step 1

Heat cold pressed sesame seed oil in a pan and add curry leaves, garlic, and green chilies.


Step 2

Add chopped bottle gourd, salt, and fresh turmeric.


Step 3

Leave the curry on medium flame until the bottle gourd is soft (approximately 10 minutes).


Step 4

Add chopped microgreens (radish, Chinese cabbage, and peas).



Step 5

Mix well and simmer for 2 minutes.


Your nutritious and delicious bottle gourd curry is ready to be served with rice or gluten-free chapatis.
