Ingredients

• 2 boneless, skinless chicken breasts

• 4 slices of whole-grain or sourdough bread

• 1 cup of microgreens (any variety such as arugula, radish, or sunflower)

• 1 ripe avocado, sliced

• 1 medium tomato, sliced

• 4 slices of cheese (optional, cheddar or Swiss work well)

• 2 tablespoons olive oil

• 1 teaspoon garlic powder

• 1 teaspoon paprika

• Salt and pepper to taste

• 2 tablespoons mayonnaise or Greek yogurt

• 1 tablespoon Mustard Microgreens or Dijon mustard

• 1 tablespoon lemon juice

Preparation

1. Prepare the Chicken:

• Pound the chicken breasts to an even thickness for uniform cooking.

• In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper.

• Rub the mixture evenly over the chicken breasts.

2. Grill the Chicken:

• Preheat a grill or grill pan to medium-high heat.

• Grill the chicken breasts for about 5-7 minutes on each side, or until fully cooked and no longer pink inside (internal temperature should reach 165°F/75°C).

• Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.

3. Prepare the Spread:

• In a small bowl, mix mayonnaise (or Greek yogurt), Dijon mustard, and lemon juice until well combined.

4. Assemble the Sandwich:

• Lightly toast the bread slices if desired.

• Spread the mayonnaise mixture evenly on one side of each slice of bread.

• Layer the sliced chicken, tomato, avocado, and cheese (if using) on two of the bread slices.

• Top with a generous handful of microgreens.

• Place the remaining bread slices on top to complete the sandwiches.

5. Serve:

• Cut the sandwiches in half if desired and serve immediately.
