Ingredients
1 and 1/2 cups poha (flattened rice)
1/2 cup radish microgreens
1/2 cup sunflower microgreens
1/2 cup Chinese cabbage microgreens
1/4 cup peanuts (optional)
Salt to taste
1 lemon
1/2 teaspoon turmeric powder
2 tablespoons oil
2 green chilies, finely chopped
2 tablespoons fresh coriander, chopped
Preparation
Prepare the Poha:
Rinse the poha in a colander under running water. Let it soak in water for about 5 minutes, then drain well and set aside.
Sauté the Aromatics:
Heat the oil in a pan over medium heat. Add the chopped green chilies and fresh coriander, and sauté for about 1 minute until fragrant.
Add Microgreens:
Add the radish, sunflower, and Chinese cabbage microgreens to the pan. Sauté for another 2 minutes until the microgreens are slightly wilted.
Cook the Poha:
Add the soaked and drained poha to the pan. Sprinkle turmeric powder and salt to taste. Mix well and cook for another 2-3 minutes, ensuring the poha is heated through and well combined with the microgreens.
Cool and Add Lemon:
Remove the pan from the heat and let the poha cool for about 10 minutes. Squeeze fresh lemon juice over the poha and mix well.
Serve:
