Ingredients
1 cup sunflower microgreens
1 cup radish microgreens
1 cup fresh coriander leaves
2 green chilies (adjust to taste)
1 small onion, chopped
2 cloves garlic
1-inch piece of ginger
1/2 cup grated coconut
1/4 cup roasted peanuts or cashews
1 tablespoon lemon juice
Salt to taste
Water, as needed
Preparation
Prepare the Ingredients:
Wash the sunflower microgreens, radish microgreens, and coriander leaves thoroughly.
Roughly chop the microgreens and coriander leaves.
Blend the Chutney:
In a blender, add the sunflower microgreens, radish microgreens, coriander leaves, green chilies, chopped onion, garlic, ginger, grated coconut, and roasted peanuts or cashews.
Add lemon juice and salt.
Blend all the ingredients together, adding water little by little to achieve a smooth consistency.
Adjust Seasoning:
Taste the chutney and adjust salt, lemon juice, or chilies as needed.
Prepare the Tempering (Optional):
Heat oil in a small pan over medium heat.
Add mustard seeds and let them splutter.
Add cumin seeds, asafoetida, and curry leaves. Fry for a few seconds until fragrant.
Pour this tempering over the prepared chutney and mix well.
Serve:
Serve the microgreens chutney with hot dosas.
