Microgreens Stuffed Paratha is a clever and tasty way to ensure your kids get their daily dose of essential nutrients. With 50g of microgreens being equivalent to 1kg of full-grown vegetables, this paratha not only satisfies their taste buds but also provides them with a powerhouse of vitamins and minerals. Ingredients
Whole wheat flour - 2 cups
Microgreens - 1 cup, finely chopped
Paneer - 1/2 cup, crumbled (optional for extra protein)
Onion - 1 small, finely chopped
Green chilies - 1, finely chopped (optional)
Cumin seeds - 1/2 tsp
Coriander powder - 1 tsp
Red chili powder - 1/2 tsp (adjust to taste)
Salt - to taste
Ghee or oil - for cooking
Water - as needed to knead the dough
Preparation
Prepare the Dough:
In a large bowl, mix the whole wheat flour with a pinch of salt. Gradually add water and knead into a soft dough. Cover and set aside.
Prepare the Filling:
In a mixing bowl, combine the finely chopped microgreens, crumbled paneer (if using), chopped onion, green chilies, cumin seeds, coriander powder, red chili powder, and salt. Mix well.
Stuff the Paratha:
Divide the dough into equal-sized balls. Roll each ball into a small circle.
Place a generous amount of the microgreens filling in the center of the dough circle. Bring the edges together to seal the filling inside.
Gently roll out the stuffed dough ball into a paratha, being careful not to let the filling spill out.
Cook the Paratha:
Heat a tawa or flat pan over medium heat. Place the rolled paratha on the hot tawa.
Cook for about 2-3 minutes on each side, applying ghee or oil, until both sides are golden brown and the paratha is cooked through.
Serve:
