Introduce your kids to the vibrant flavors of mixed microgreens and the mild onion essence of onion microgreens in this easy-to-make omelette. It's a perfect choice for a quick, wholesome breakfast or a satisfying lunch.

Ingredients

  • 4 large eggs

  • 1/2 cup mixed microgreens (such as Radish, Mustard, or Chinese Cabbage)

  • 1 tablespoon onion microgreens

  • 1/4 cup shredded cheese (optional)

  • 1 tablespoon butter or olive oil

  • Salt and pepper to taste

  • Fresh herbs (optional, for garnish)

Preparation

  1. Prepare Ingredients:

    • In a bowl, whisk together the eggs until well combined. Season with salt and pepper. At this stage, feel free to mix in the chopped microgreens. Alternatively, for a different approach to incorporating microgreens into your omelette, you can follow our step 3. Set aside.

    • Heat butter or olive oil in a non-stick skillet over medium heat.

  2. Cook the Omelette:

    • Pour the whisked eggs into the skillet, tilting to ensure even distribution.

    • Let the eggs cook undisturbed for a minute until the edges start to set.

  3. Add Fillings:

    • Sprinkle mixed microgreens and onion microgreens evenly over one half of the omelette.


    • Add shredded cheese if using.

  4. Fold and Serve:

    • Using a spatula, gently fold the other half of the omelette over the filling.

    • Cook for another minute until the cheese melts and the omelette is cooked through.

  5. Garnish and Serve:

    • Slide the omelette onto a plate.

    • Garnish with fresh herbs if desired.
