Ingredients

  • Paneer (Indian cottage cheese): 300g

  • Capsicum (bell peppers): 2, diced

  • Onions: 2, finely chopped

  • Green chilies: 2, finely chopped (adjust to taste)

  • Microgreens: 1 cup

  • Fresh coriander leaves: 2 tablespoons, chopped

  • Salt: to taste

  • Turmeric powder: 1/2 teaspoon

  • Red chili powder: 1/2 teaspoon (adjust to taste)

  • Oil: 2 tablespoons

  • Ginger and garlic: 1 tablespoon, minced

Preparation

  1. Prepare the Ingredients:

    • Dice the capsicum and finely chop the onions, green chilies, and coriander leaves.

    • Crumble the paneer into small pieces.

  2. Cook the Base:

    • Heat oil in a large pan over medium heat.

    • Add the finely chopped onions and green chilies to the pan and sauté until the onions turn golden brown.

    • Add the minced ginger and garlic, and sauté for another 1-2 minutes until fragrant.

  3. Add the Vegetables:

    • Add the diced capsicum to the pan and cook for about 3-4 minutes until they start to soften.

    • Sprinkle in the salt, turmeric powder, and red chili powder. Stir well to coat the vegetables with the spices.

  4. Incorporate Microgreens:

    • Add the microgreens to the pan and mix well. Cook for 2-3 minutes until they are slightly wilted.

  5. Add Paneer:

    • Add the crumbled paneer to the pan. Mix the paneer with the vegetables and spices, ensuring everything is well combined. Cook for another 2-3 minutes until the paneer is heated through.

  6. Finish and Serve:

    • Garnish with freshly chopped coriander leaves.

    • Serve hot with chapati, naan, or rice, making a delightful and nutritious meal for kids.
