About the Recipe

Poha Microgreens Cutlet is a delightful twist on the traditional poha, incorporating nutrient-rich microgreens for an added health boost. These gluten-free and vegan cutlets are easy to prepare and make for a great snack or appetizer. Packed with flavors from fresh vegetables and spices, they are a hit with both kids and adults alike.

Ingredients

  • Poha (flattened rice) - 1/4 cup

  • Microgreens - 1 small bunch

  • Onion - 1 small, finely chopped

  • Carrot - 1, grated

  • Capsicum - 1/4, finely chopped

  • Coriander - a handful, finely chopped

  • Salt - to taste

  • Red chili powder - to taste

  • Chaat masala - to taste

  • Rice flour - 1 tbsp

  • Ghee - for roasting

Preparation

  1. Soak the poha in water for about 30 minutes until it softens.

  2. Drain and mash the poha in a bowl.

  3. Add the finely chopped onions, grated carrot, chopped capsicum, microgreens, and coriander to the mashed poha.

  4. Season with salt, red chili powder, and chaat masala.

  5. Add the rice flour and mix everything well to form a dough-like consistency.

  6. Shape the mixture into small patties (cutlets).

  7. Heat ghee in a pan over medium heat.

  8. Roast the cutlets in the pan for about 5 minutes on each side until they are golden brown and crispy.

  9. Serve hot with your favorite chutney or sauce
