• 500g mutton, cut into small pieces

• 2 onions, finely chopped

• 3 tomatoes, chopped

• 2 green chilies, chopped

• 1 tablespoon ginger-garlic paste

• 1 teaspoon turmeric powder

• 2 teaspoons red chili powder

• 1 teaspoon coriander powder

• 1 teaspoon garam masala

• Salt to taste

• 2 tablespoons oil

• Handful of microgreens for garnish


Step 1

Heat oil in a pan over medium heat. Add chopped onions and sauté until golden brown.

Step 2

Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.

Step 3

Add chopped tomatoes and cook until they turn soft and mushy.

Step 4

Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.

Step 5

Add mutton pieces to the pan and mix until they are well coated with the spice mixture.

Step 6

Cook covered on low heat for about 30-40 minutes or until the mutton is tender, stirring occasionally. If the mixture becomes too dry, you can add a little water.

Step 7

Once the mutton is cooked and the oil separates, increase the heat to medium-high and fry the mutton for another 5-7 minutes, stirring frequently, until it turns golden brown and slightly crispy.

Step 8

Garnish with microgreens before serving. The freshness of the microgreens will add a delightful touch to the dish.

Step 9
