Ingredients
200g paneer, cubed
2 cups mustard microgreens
1 cup radish microgreens
1 cucumber, sliced
1 red bell pepper, thinly sliced
1 carrot, julienned
1 small red onion, thinly sliced
1 tbsp olive oil
1 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
Salt to taste
Juice of 1 lemon
1 tbsp olive oil (for dressing)
Freshly ground black pepper (optional)
Preparation
Prepare the Paneer:
In a pan, heat 1 tbsp olive oil over medium heat.
Add cumin powder, turmeric powder, red chili powder, and salt. Stir for a few seconds.
Add the paneer cubes and toss them in the spices, cooking until they are lightly golden and well-coated with the spice mix. Set aside to cool.
Assemble the Salad:
In a large salad bowl, combine mustard microgreens, radish microgreens, cucumber, red bell pepper, carrot, and red onion.
Add the spiced paneer cubes to the salad.
Prepare the Dressing:
In a small bowl, mix the lemon juice, olive oil, and a pinch of salt. You can add freshly ground black pepper for an extra kick.
Drizzle the dressing (optional) over the salad and toss gently to ensure everything is well-coated.
