Packed with the peppery flavors of mustard and radish microgreens, this salad brings together the soft, spiced paneer and fresh, crunchy veggies for a satisfying and healthy dish. Ideal for lunch or a light dinner, it’s a perfect way to enjoy the benefits of microgreens while keeping things flavorful and exciting.

Ingredients

  • 200g paneer, cubed

  • 2 cups mustard microgreens

  • 1 cup radish microgreens

  • 1 cucumber, sliced

  • 1 red bell pepper, thinly sliced

  • 1 carrot, julienned

  • 1 small red onion, thinly sliced

  • 1 tbsp olive oil

  • 1 tsp cumin powder

  • 1/2 tsp turmeric powder

  • 1/2 tsp red chili powder

  • Salt to taste

  • Juice of 1 lemon

  • 1 tbsp olive oil (for dressing)

  • Freshly ground black pepper (optional)

Preparation

  1. Prepare the Paneer:

    • In a pan, heat 1 tbsp olive oil over medium heat.

    • Add cumin powder, turmeric powder, red chili powder, and salt. Stir for a few seconds.

    • Add the paneer cubes and toss them in the spices, cooking until they are lightly golden and well-coated with the spice mix. Set aside to cool.

  2. Assemble the Salad:

    • In a large salad bowl, combine mustard microgreens, radish microgreens, cucumber, red bell pepper, carrot, and red onion.

    • Add the spiced paneer cubes to the salad.

  3. Prepare the Dressing:

    • In a small bowl, mix the lemon juice, olive oil, and a pinch of salt. You can add freshly ground black pepper for an extra kick.

    • Drizzle the dressing (optional) over the salad and toss gently to ensure everything is well-coated.

  4. Serve:

    • Serve immediately, garnished with additional microgreens if desired.
