  • 500g Chicken

  • 1 cup Yellow cucumber

  • 1 cup Chow chow

  • Salt to taste

  • Cold pressed coconut oil

  • Choice of Microgreens (such as radish, Chinese cabbage, corn, and peas)


Step 1

Heat cold pressed coconut oil in a pan and add chopped yellow cucumber and chow chow.

Step 2

Add chicken pieces and salt to taste.

Step 3

If using a pressure cooker, cook for 2-3 whistles. If using a pan, cook until the chicken is soft.

Step 4

Once the chicken is cooked, add your choice of microgreens (radish, Chinese cabbage, corn, peas).

Step 5

Mix well and simmer for 2 minutes.

Step 6

Serve this nutritious and delicious Chicken and Microgreens Delight Curry with rice or gluten-free chapatis.
