Ingredients

  • 1 cup yellow lentils (toor dal)

  • 3 cups water

  • 1 tablespoon ghee or oil

  • 1 teaspoon cumin seeds

  • 1 teaspoon mustard seeds

  • 1 onion, finely chopped

  • 2 tomatoes, chopped

  • 2 cloves garlic, minced

  • 1-inch piece of ginger, grated

  • 1 green chili, chopped (optional)

  • 1 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1 teaspoon cumin powder

  • Salt to taste

  • Handful of microgreens for garnish

Preparation

Step 1

Rinse lentils until water runs clear. Drain.


Step 2

In a large pot, add the lentils and water. Bring to a boil, then reduce the heat to low and simmer for about 20-25 minutes or until the lentils are tender. Stir occasionally and skim off any foam that forms on the surface.

OR

Use a pressure cooker, boil for 4-5 whistles.


Step 3

In a separate pan, heat the ghee or oil over medium heat. Add the cumin seeds and mustard seeds and cook until they start to splutter.


Step 4

Add the chopped onion and sauté until translucent.



Step 5

Stir in the minced garlic, grated ginger, and green chili (if using). Cook for another minute.


Step 6

Add the chopped tomatoes and cook until they soften.


Step 7

Stir in the turmeric powder, coriander powder, cumin powder, and salt. Cook for a couple of minutes.


Step 8

Add the cooked lentils to the tomato mixture and mix well. If the dal is too thick, you can add more water to reach your desired consistency


Step 9

Simmer the dal for another 5-10 minutes to allow the flavors to meld together.


Step 10

Garnish with microgreens before serving. Enjoy your flavorful dal with a nutritious touch of microgreens!
