Ingredients
For the Paneer Filling:
200g paneer, cubed
1 tbsp oil
1 tsp cumin seeds
1 tsp paprika
1 tsp ground cumin
1/2 tsp turmeric powder
1/2 tsp chili powder
Salt to taste
1 tbsp lemon juice
1 tbsp fresh cilantro, chopped
For the Tacos:
8 small soft tortillas
1 cup mixed bell peppers, sliced
1 small onion, thinly sliced
1/2 cup shredded lettuce
1/2 cup microgreens (such as radish or sunflower)
1/4 cup shredded cheddar cheese (optional)
1/4 cup sour cream or yogurt
1/4 cup salsa
Preparation
Prepare the Paneer Filling:
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add the paneer cubes, paprika, ground cumin, turmeric, chili powder, and salt. Toss to coat the paneer evenly with the spices.
Sauté the paneer for 5-7 minutes until golden brown.
Add lemon juice and chopped cilantro, stir, and remove from heat.
Assemble the Tacos:
Warm the tortillas in a dry skillet or microwave for a few seconds until soft.
Place a layer of shredded lettuce on each tortilla.
Add a portion of the spiced paneer cubes on top.
Top with sliced bell peppers, onions, and shredded cheese if using.
Drizzle with sour cream or yogurt and add a spoonful of salsa.
Garnish generously with fresh microgreens.
Serve:
Fold the tortillas in half, securing the fillings inside.
Serve immediately with extra salsa on the side.
